India’s climatic variations across its regions allow for cultivation of a variety of vegetables and it ranks second in the world in vegetable production. Vegetables like ginger, okra, onions, brinjal (egg plant), beetroot, tomatoes, cauliflower and cabbage is widely available.
In India the current production is over 71 million MT and the total area under vegetable cultivation is around 6.2 million hectares. The widest grown vegetables are potato, tomato, onion, cabbage and cauliflower which together account for 60% of the total vegetable production. It is the open field cultivation that is followed in India unlike the green house cultivation practised in other countries.
Vegetables are a rich source of vitamins like niacin, riboflavin, thiamine and vitamin A & C. The also contain minerals such as calcium and iron. They are the cheapest source of proteins. Most of the vegetables are short duration crops and fit very well into the intensive cropping systems to give rich yields year after year.
